Description:

SkyBridge Luxury & Associates is partnering with an ultra-luxury resort to source a skilled Executive Pastry Chef. This role is suited for an experienced pastry professional with a deep understanding of luxury desserts, wedding cakes, and fine pastry creations. The Executive Pastry Chef will lead a talented team, designing and executing high-end pastry offerings that exceed guest expectations and align with the resorts reputation for excellence. A passion for creativity, consistency, and quality is essential, as this role will oversee all pastry operations, including wedding cakes, daily pastry production, and signature dessert items for multiple dining venues.

Key Responsibilities:

Luxury Wedding Cake & Pastry Design:

  • Create and design bespoke luxury wedding cakes and elaborate dessert displays that align with the resorts standards. Collaborate with wedding and event teams to customize designs that reflect each couples vision.

Team Leadership & Development:

  • Lead, train, and mentor a team of pastry chefs, ensuring consistency, quality, and a high level of creativity across all pastry offerings. Establish a positive work environment focused on growth and excellence.

Daily Fresh Pastry Production:

  • Oversee the daily production of fresh pastries and baked goods, maintaining exceptional quality for breakfast, afternoon tea, and dessert service across the resort. Ensure that all pastries meet luxury standards in taste, texture, and presentation.

Menu Innovation & Seasonal Offerings:

  • Develop seasonal and innovative dessert menus that showcase the finest ingredients and reflect current trends in luxury pastries. Regularly introduce new items that enhance the resorts reputation and guest experience.

Quality Control & Standards Compliance:

  • Implement and uphold the highest standards for cleanliness, food safety, and quality control within the pastry kitchen. Conduct regular tastings and quality assessments to ensure product consistency.

Cost & Inventory Management:

  • Manage pastry department budgets, control food costs, and oversee inventory of ingredients. Ensure efficient use of resources and maintain relationships with premium vendors for quality sourcing.

Collaboration with Culinary and Event Teams:

  • Work closely with other culinary leaders and event teams to ensure smooth coordination for weddings, banquets, and resort events. Support custom requests and themed events with unique, high-quality pastry offerings.

Qualifications:

  • Bachelors degree in Pastry Arts, Culinary Arts, or related field (or equivalent experience)
  • Minimum of 5 years of experience as a Pastry Chef, with experience in luxury or ultra-luxury settings
  • Proven expertise in creating luxury wedding cakes, custom pastries, and high-end desserts
  • Strong leadership skills with experience managing and mentoring a pastry team
  • Excellent understanding of ingredient sourcing, inventory management, and cost control
  • Creative, detail-oriented, and dedicated to producing high-quality pastries
  • Knowledge of food safety and sanitation regulations
